3 Healthy Sweet Treats (All You Need is a Mug and a Microwave!)

Everyone loves desserts, and even more, everyone loves convenience. That’s why I’m giving you the best of both worlds with some of my favorite microwaveable healthy sweet treats recipes.
I have always been a sucker for dessert, but with more and more research pointing towards refined sugars as the culprit for weight gain and many health conditions, I’ve decided to stay away from it as much as possible and make more healthy choices. That’s where these delicious bites come into play.

1 Mug+ 1 Microwave = 3 Healthy Sweet Treats

1) Easy Blueberry Mug Muffin

1 Tbs coconut flour
1 Tbsp almond flour
2 tsp Stevia (powdered not liquid) (adjust to taste)
1/2 tsp baking powder
Pinch cinnamon
1 large egg (can sub for 1 large egg white or 1 flax egg)
1 Tbsp Coconut Oil
1 Tbsp Almond Milk
2-3 Tbsp frozen blueberries
Directions
In a small mixing bowl, combine the flours, sweetener, cinnamon and baking powder and mix well.
Add in your egg, coconut oil, almond milk, and mix together. Add the blueberries and leave a few at the top.
Microwave for 50 seconds (or up to 2 minutes, depending on your microwave) and enjoy!

2) Peanut Butter Oatmeal Mug Cake

6 tbsp Milk
2 tbsp coconut Oil
2 tsp Powdered Stevia (adjust to taste)
6 tbsp All-Purpose Flour
3 tbsp tablespoons rolled oats
½ tsp Baking Powder
¼ tsp Sea salt
2 tbsp Natural unsweetened peanut butter
Directions
Whisk milk, oil, and stevia together in a 12 oz. or larger mug.
Whisk in the flour until smooth.
Whisk in the oatmeal, baking powder, and salt until fully incorporated.
Spoon the peanut butter on top and push it into the batter slightly.
Microwave on HIGH for 30 seconds, and then in 15-second bursts until the top looks dry and cooked and springs back when pressed with a finger.
Let stand at least 5 minutes before eating.

3) Healthy Pancake In A Mug

1 tablespoon butter
2 tablespoons coconut flour
2 tablespoons non-fat Greek yogurt
1 tablespoon milk
1 egg
Syrup or fruit for serving.
Instructions
Melt butter in a mug in the microwave.
Mix the melted butter around to coat the inside of the mug.
Add remaining ingredients and stir whisk until smooth.
Microwave 1 to 1½ minutes.
Serve with syrup, fruit, and/or more butter if desired.
